9、煤气开至最小火,焖约4个小时即可

备注:

1、葱量一定要多,作中仅是靠葱中的水分将肉焖熟焖烂,所以葱一定要足量

2、如果是比较高的砂锅,则可以一层葱,一层肉,再一层葱,一层肉这样,一定要确定最上面和最下面的都是葱

3、砂锅底要垫竹箅子,否则难免不糊锅

4、砂锅的边沿包上纱布,是为了使水气尽量留在锅中

5、整个焖的过程,火都要调到最小档,用最微小的火慢慢焖
