原料：虫草花3克，嫩豆腐1块，高汤1碗，瘦肉30克，青葱数根，麻油(或不放)盐、生抽、红薯粉、料酒、蚝油、胡椒粉、味精(可免)

建议用高汤来作汤底，则可不必再放其它油。没有高汤用清水代替的话，最好放勺猪油，以增加汤的鲜香度。

做法：

瘦肉切成丝，用红薯粉、料酒、盐、生抽、蚝油、胡椒粉腌15分钟；豆腐在盘中切成1厘米宽、4厘米长的小条块；虫草花洗净，用清水泡5分钟捞出，泡过虫草花的水不要倒掉，放进红薯粉拌匀成红薯粉水。

冷锅中倒入高汤和虫草花，大火烧开水，转小火先煮10分钟。

汤色变成红色，下豆腐继续煮10分钟。(“千滚豆腐万滚鱼”，豆腐在汤里多煮汤会更鲜)

倒入红薯粉水，边倒边摇晃锅子，让红薯粉水与汤均匀揉和在一起。(火都不要开大)

汤变粘稠后，把火开大，倒进肉丝，用筷子搅开肉丝，待肉丝全变成白色，关火，趁汤有余温时放盐、生抽、胡椒粉、味精(可免)调色调味，最后撒上青葱粒淋麻油即可。(不喜欢麻油味的可免放)
